Your average cast iron skillet is god-tier in the durability department — you can wash it wrong, bang it up, and heat the shit out of it, and it’ll still cook just fine (with a little TLC). But whatever you do, don’t even think about making a tomato or wine-based sauce in one of those things: highly acidic food is a cast iron pan’s sole Achilles’ heel.

Traditional cast iron cookware relies on a slick patina of heat-baked-in oil called “seasoning” to maintain a nonstick surface, which starts breaking down if something acidic sits in it for too long. For this reason, it’s always nice to have an enameled cast iron pan or two on hand: Their glassy porcelain glaze replaces that natural layer of seasoning and makes the material safe to use with acidic ingredients.  Read more…
